This oil is made from green Koroneïki olives picked as soon as they ripen towards the end of November and pressed the same day. Thanks to its climate and the richness of its soil, the Trifilia region produces exceptional olive oil which gives a particular flavor, with less than 0.3% acidity. For 2 months, this unfiltered olive oil is left to decant naturally resulting in oil with no residues rendering it perfect for cooking. With its green color with golden highlights, its clear and strong olive and greenery aromas and its light peppery taste, this oil lends itself to many uses.
